Their website is focused on commercial meats; i.e., it doesn't say anything about obtaining other parts for medical research, etc., but they do plenty of it, as I understand it. If you call them they will direct you to the person who handles such things.

In terms of using a porcine (pig) eye for a human eye model
Ex vivo is OK if the cornea is kept moist between sacrifice and surgery. However, vessel pressure and IOP will decline rapidly so ex vivo is not ideal. Live pigs would be much better. Many people have also used rabbits for these studies, and are cheaper, smaller, and easier to handle.
